Cod Blaff with Rice Pilaf
It may not have the most appetizing name but Cod Blaff is delicious. It had a nice flavor and is an easy, healthy, and delicious way to get more fish into your dinner rotation. Although it is probably not a week night meal with the 2+ hour marination, it is well worth it to try when you have the time.
2 lb cod steaks
3 spring onions
3 garlic cloves, crushed
1 teaspoon thyme
2 whole allspice berries or 1 teaspoon of ground allspice (or alternatively 2 bay leaves)
5 oz white wine
1/2 cup water
3 tablespoons sunflower oil
3 green hot peppers
A few sprigs of parsley
Mince the onions and spring onions with the stems. Squeeze the limes. Cut the hot peppers into thin slices. Chop half the parsley.
In a bowl, place all ingredients and mix. Add the cod and drench in the mixture.
Cover with plastic wrap and marinate in the refrigerator for two hours (or more if possible).
Pour the marinade into a large pot. Pour the white wine, water, oil, thyme, salt, allspice and cloves. Dip the fish in the sauce.
Boil this mixture over high heat for 3 minutes, then reduce heat and simmer 15 minutes. Sprinkle with remaining parsley.
Simmer uncovered for 10 minutes over low heat.
1 1/2 cup rice
4 tablespoons oil
2 spring onions, finely chopped
A few threads of saffron or a teaspoon of ground saffron
Do not wash the rice. In a large pot, add the oil, heat slightly and add the onions.
Stir constantly and melt over low heat without coloring them.
Pour the rice. Stir constantly over medium heat until it becomes milky. Cover with boiling water. Add salt, pepper, saffron. Cover.
Cook rice over low heat without stirring until the water is absorbed and the rice features holes.
Turn the heat off. Let stand covered for 5 minutes before serving.
