Bis Keemiyaa
These deep fried stuffed packages are like a cousin to the egg roll. Simple ingredients wrapped up in dough and then fried until golden brown.
Ingredients:
For the filling
8 eggs (hard-boiled & cut in to cubes)
2 cups cabbage (thinly slices)
1 big onion
Maldivian chilly chopped ( I used 1/3 of a Scotch Bonnet)
1/2 tsp pepper powder
Salt
For the dough
450g flour
1 1/3 cup warm water
1/2 cup vegetable oil
1/2 tsp salt
Oil for frying
Method
Prepare dough:
In a bowl mix flour, oil, salt and pour warm water slowly mixing after each addition, if the dough is too sticky add little flour, if too dry add more water until you get a smooth dough. Divide this dough in to balls Set aside.
Prepare Filling:
In a sauce pan fry onion, chilly & cabbage until soft. Add eggs, pepper powder season with salt.
Making pastry:
Roll one ball of dough into a round shape like roshi.
Add 1 tbs of egg mixture in the middle. Close one half.
Apply water in the other side of rolled ball & cover this over the closed side.
Apply water again in both sides and bring each side in middle of pastry closing completely.
Keep on making this pastry until all filling is finished.
Fry both sides of pastry in oil until light golden brown.
