Daraba
Daraba is a traditional dish prepared with okra, tomatoes, sweet potatoes, greens, peanut butter (or peanut paste), and additional ingredients.
Ingredients
20 fresh okra – chopped
3 tomatoes – chopped
1 cup mixed greens – finely shredded (a chiffonade)
1 sweet potato – cubed
1 eggplant – cubed
3/4 cup peanut butter
1 stock cube
Salt to taste
Pepper to taste
Cayenne pepper to taste
Instructions
1. Add the vegetables to a pot and cover with water and spices
2. Bring the water to a boil
3. Reduce to a simmer and cook for half an hour, or until the vegetables are almost done
4. Remove 3/4 cups of the stock and mix with the peanut butter to form a smooth sauce
5. Add the peanut butter and the stock cube to the vegetables and simmer for 10 minutes, or until the sauce has thickened
