
United States of America (USA) – Hamburger & Fries
A word of caution, this recipe is not cheap, but so worth it. I honestly have to say after making this, it was definitely the best burger I have ever had. And the from scratch french fries are just the icing on the cake. Cost aside, if you want to have a food memory that will last you lifetime, give it a try. But be warned, you will be ruined for all other hamburgers in the future. You’re welcome.
Hamburger Ingredients
1 pound beef chuck, sliced 3/4 inch wide
3/4 pound boneless beef short ribs, sliced 3/4 inch wide
1/2 pound flatiron steak, sliced 3/4 inch wide (I used skirt steak)
1/2 pound hanger steak, sliced (I used flank steak)
3/4 inch wide 1/2 pound beef brisket, sliced
3/4 inch wide
Kosher salt
Hamburger Instructions
1. Freeze the meat in a single layer on a parchment-lined baking sheet until firm, 30 minutes.
2. In a grinder fitted with a chilled medium plate, gradually add the meat slices and grind at medium-high speed into a chilled bowl; do not force it. Working quickly, gradually re-grind the ground meat, pushing gently only if necessary.
3. Light a grill or preheat a grill pan. Form the meat into eight 3/4- inch-thick patties. Generously season with salt. Grill over high heat until browned outside and medium-rare within, 3 to 4 minutes per side. Serve the burgers in buns with ketchup, mustard, lettuce and tomato.
French Fry Ingredients
1 large russet potato, cut into evenly sized strips
vegetable oil for frying, about 2 cups or as needed
salt to taste
French Fry Directions
Soak potato strips in a large bowl of water for about 30 minutes.
Pat with paper towels until thoroughly dry.
Heat oil in a deep-fryer or large saucepan to 275 degrees F (135 degrees C). Gently add potatoes to the hot oil and fry for about 5 minutes, stirring and flipping the potatoes occasionally.
Use a slotted spoon to transfer potatoes to a paper towel-lined plate. Let cool completely.
Heat oil again, but this time to 350 degrees F (175 degrees C). Add potatoes and fry a second time until golden brown, 5 to 6 minutes.
Remove from the deep-fryer and blot with a paper towel. Sprinkle with salt to serve.
