
Timor – Batar Da’an (Pumpkin and Corn Dish)
Sweet savory confection in a bowl. Sometimes you have to tell yourself before you make a new dish to not judge the outcome before it happens. I was not too excited about this recipe I am ashamed to say, but it definitely exceeded my expectations. This is comfort food, from the sweet butternut squash and corn to the savory onion, garlic and mung beans. Fill a bowl and binge watch the series du jour.
Ingredients
1 lb fresh or frozen corn
½ lb dried mung beans
2 lb squash pumpkin or butternut squash, peeled and diced
4 cups water
2 onions diced
8 cloves garlic minced
3 tablespoons olive oil
Salt and pepper to taste
Instructions
- The night before, soak the mung beans in water for at least 10 hours.
- Drain the mung beans.
- Boil them for 10-15 minutes.
- Meanwhile, sauté onion and garlic in olive oil over medium heat for 6-8 minutes.
- Add water, squash, beans and corn.
- Increase heat to high heat. When water is boiling, reduce heat to medium and cook, stirring occasionally, until squash is tender, about 15-20 minutes until the liquid is reduced to a minimum.
- Season with salt and pepper to taste. Serve with rice.
