Timor – Batar Da’an (Pumpkin and Corn Dish)

Sweet savory confection in a bowl. Sometimes you have to tell yourself before you make a new dish to not judge the outcome before it happens. I was not too excited about this recipe I am ashamed to say, but it definitely exceeded my expectations. This is comfort food, from the sweet butternut squash and corn to the savory onion, garlic and mung beans. Fill a bowl and binge watch the series du jour.

Ingredients

1 lb fresh or frozen corn 

½ lb dried mung beans

2 lb squash pumpkin or butternut squash, peeled and diced

4 cups water

2 onions diced 

8 cloves garlic minced 

3 tablespoons olive oil 

Salt and pepper to taste

Instructions

  1. The night before, soak the mung beans in water for at least 10 hours.
  2. Drain the mung beans.
  3. Boil them for 10-15 minutes.
  4. Meanwhile, sauté onion and garlic in olive oil over medium heat for 6-8 minutes.
  5. Add water, squash, beans and corn. 
  6. Increase heat to high heat. When water is boiling, reduce heat to medium and cook, stirring occasionally, until squash is tender, about 15-20 minutes until the liquid is reduced to a minimum.
  7. Season with salt and pepper to taste. Serve with rice.
